Mango & Pineapple Smoothie

Mango & Pineapple Smoothie is a favorite take on—or is inspired by Lassi drinks you’ve ordered in a restaurant. Mango and Pineapple are fruits that pair so well, it’s hard to imagine anything better than the two!
A third ingredient synergizes with tropical fruits. It’s coconut! In fact coconut has so many edible forms you could choose either coconut cream, coconut milk, or coconut water to add to a smoothie.A note about ice, just in case you miss it in my recipe below:

Smoothies with ice are not in my diet, as ice cultures the drink ‘way past cold. And cold food and drinks, according to Ayurveda are an unhealthy temperature for your stomach. Even so, if you prefer to have ice in your smoothie, please go ahead. But consider that taste and texture are the biggest factors in delicious smoothies. Then at least give my version a try!

Taste is first, and the aim of this recipe is to deliver rich mango, pineapple and ginger flavors. What coconut adds is taste for sure, and also texture—the creaminess and a certainly frothy mouthfeel that’s like drinking your dessert.

Mango & Pineapple Smoothie Recipe

Makes about 2 cups

1 Alfonso or Ataulfo Mango, peeled and coarsely chopped* (see Notes, below)
4-5 pieces of prepared Pineapple**
3/4 cup non-dairy milk
1/4 cup coconut water or milk***
a small pinch of nutmeg
1/2″ – 1″ piece of fresh ginger, peeled and chopped

Method:
Mix all ingredients in a blender and blend on high until smooth. Pour into glasses and serve. Enjoy!

Notes:

*Alfonso or Ataulfo Mangoes (the yellow mango on left) are just the right size (and flavor) for this recipe. If you have a different mango, use it instead!

**Already made Pineapple Tisane from this recipe? Use those infused and strained slices for this recipe! If not, simply cut dried rings of pineapple and soak in hot water for 2 hours minimum. Well-soaked, they will be the right texture for this smoothie.

***Coconut water is sweet and compliments the balance of textures in the mango/pineapple combination. Use coconut milk if that’s what you have. The point is to take advantage of coconut silkiness that marries the two golden fruits.

Spice Notes:

Use “1/2″ – 1″ piece of fresh ginger” because ginger really compliments the taste of these two tropical fruits. It’s also a digestive spice, meaning it promotes healthy food assimilation. You can choose to have more or less of this hot spice!

Additional spices you might add are ground cinnamon or coriander, cardamom seeds (no husks) or ground cardamom.
