Date Syrup Recipe

Make Date Syrup, a low-glycemic sweetener for teas and coffees, whether hot or cold!
And keep it handy for these goodies.

Ingredients:

12-14 large Medjool dates, pitted
Pure water just off the boil to partially cover
1 teaspoon ground ginger
¼ teaspoon (4-5) allspice berries
¼ teaspoon cloves

Method:

1. Pit all the dates and pack them one-layer deep in the bottom of a large heat-proof bowl. Pour enough boiling water over them to cover. Place a plate or large pot top over the bowl to keep the heat of the water as long as possible. Leave to rest for 2-3 hours, or longer is okay.

2. Meanwhile, grind the allspice berries and cloves together in a spice blender.

3. Transfer the dates to a blender or carafe of a stick blender. Pour the allspice-clove mixture and ground ginger into the already combined dates and water. Blend on high-speed to completely form a paste from the now softened dates and soaking water. Taste and adjust spices.

4. Spoon the date paste into a wide-mouth jar. Close tightly and store in the refrigerator about 3 weeks.

Date Paste Instead of Jam, on Toast or Waffles
Date Paste in Frosting on Cake
Date Paste Sweetener in Tea or Coffee
Date Paste Sweetener for Hot Chocolate
